Lone Star BBQ Sanctioned Barbeque Cook-Off Rules & Regulations
1. A $75 entry fee is required for one or all meat categories (brisket, ribs, chicken). The entry fee for
beans will be $10. The entry fee for wings will be $15.
2. The chief cook will be held responsible for the conduct of the team. No more than five cooks per
team are allowed. Each team will be responsible for the clean up of their space.
3. Trophies will be awarded 1st-10th places in meat categories.PRIZE MONEY 80% payback for
meat products plus added money. 80% payback for Wing and Beans.
4. Judging will follow the Lone Star rules and regulations. The chief cook will have barbeque at the
judging area on time. One container of each category will be judged. All entries must be in
containers supplied by officials. Barbeque will be judged on aroma, appearance, texture and taste.
5. Fires must be of wood or wood substance. No electric or gas grills. Contestants must supply all
needed equipment and supplies. Each team will be responsible for their team members and guests.
6. Competition meat cannot be seasoned, marinated or on the pit before the official start time. The
official start time is 5:00 pm Friday June 17th. No precooked, pre-boiled or pre-marinated
meats. Cooking (including seasoning or marinating) will not begin until judges inspect the meat.
8. Contestants may begin setting up anytime during the day on Friday, June 17th. Check-in will
begin at 5:00 p.m. Contestants must be checked in by 8 a.m. on Saturday, June 18th. No
security for the pits will be provided.
9. Contestants must provide their own tables, chairs and tents if so desired. There will be no
electricity available.
Jack Pot Beans
1. Beans must be “dried” pinto beans only.
2. Turn in shall be free of markers; beans and juice only will be turned in. No ingredients larger than
the beans in the cup.
3. Beans will be judged on aroma, appearance, consistency, juice, tenderness and taste.
